Cooking 101: How to make gourmet food using can opener

One of the strangest euphemisms found in the restaurant world is the term "speed scratch." It was coined at the offices of a professional food service magazine and was used in an article demonstrating the use of canned or frozen food adjusted with fresh ingredients to give the semblance of "homemade." Such magazines are mainly aimed at larger chain restaurants and institutional feeding conglomerates and therefore devote most of the pages to business analysis and various means of cost control.
